Cinnamon Pear Porridge Bowl

Porridge is a great go to breakfast for when you fancy something warming and filling to kickstart your day. Oats are an amazing source of slow releasing carbs and are also a good way to get some more fibre into your diet. Not to mention, they’re super quick and easy to prepare and you can get creative with lots of different toppings and flavour combinations.

For this particular recipe, we’ve added in our organic coconut oil for extra creaminess and a delicious hint of coconutty flavour. For toppings, we have some gloriously sweet and gooey caramelised pear chunks, cooked in cinnamon for that gorgeous winter scent and flavour. This will seriously leave your kitchen smelling incredible in the morning!

Ingredients- serves 1 

1/2 cup oats

1 cup water

1.2 cup coconut/almond/rice milk

1 heaped tsp Coco Zumi Coconut oil

Optional- 1 tsp rice syrup/agave

1 small pear

Extra coconut oil for cooking

Dash of cinnamon

Method:

In a saucepan, combing the oats, water and milk and heat these over low to medium heat.

Stir frequently to help the porridge become nice and thick and creamy.

Meanwhile, whilst this is cooking, slice your pear into small bite-sized pieces and pop these into a pan with a tsp of coconut oil. Cook these over a medium heat until they begin to soften and caramelise. Add a sprinkling of cinnamon and a splash of water if they start to stick to the pan.

When your porridge has finished cooking, stir through the sweetener if using and add any more liquid if needed.

Serve in your favourite bowl and top with the cooked pear and other toppings of choice. Tuck in and enjoy!
