Coconut water & kiwi porridge
So, we’ve had coconut water smoothies, smoothie bowls and even a pink lemonade recipe.. but have you ever tried cooking your oatmeal in coconut water? I must admit, we were slightly sceptical when it came to testing out this recipe too.. but I’m, pleased to say that it was a great success! Our coconut water has a delicious, naturally sweet flavour, which helps to create a really creamy, subtly sweet porridge bowl. Coconut water is also a good source of electrolytes and a good way to kickstart your morning with a hydrating hit!
Seeing as Summer is just around the corner (well, despite the recent rainy weather), we’ve topped our oatmeal with some vibrant fresh kiwi slices, for a citrus kick. You could then add a selection of different toppings such as: nut butter, berries and coconut chips.
1/2 cup oats
1/2 cup water
3/4 cup coconut water
1 tbsp brown rice/maple syrup
A dash of almond milk
1 fresh kiwi
Combine the oats with the water in a saucepan and heat these together over a low-medium heat.
Once the oats have started to thicken and absorb some of the liquid, pour in the coconut water and continue to cook your porridge, stirring continuously.
Cook the oats over a low heat and once most of the liquid has been absorbed, stir through the rice or maple syrup. Stiring your oats as they cooks, helps to achieve that really creamy consistency. If you feel that they are slightly too thick, you could always add in some extra water, Finally, pour in a dash of almond milk and allow them to finish cooking.
Serve into a bowl and top with some sliced fresh kiwi and other toppings of choice. Enjoy!
