Coconutty banana oatmeal

Porridge can truly make such an incredibly delicious breakfast and can also be rather a nutritious one at that too! So you might be thinking.. plain oats and water doesn’t sound all that exciting? Well, you’d probably be right there! So, we’ve jazzed up this porridge dish by adding in some coconut oil for some healthy fats and a super creamy texture; as well as the subtle hints of coconutty flavour in there too! Also, to top the whole thing off, there’s an incredible sweet and gooey caramelised banana that’s been fried in coconut oil, leaving it deliciously crisp and golden on the outside, with a soft, indulgent centre. How good does that sound?

Adding coconut oil into your oats is a great way to up the healthy fat content of the dish and also provide some natural sweetness, without having to use any sweeteners. It might also be a nice one to try, if you don’t want to use milk with your oats, as it helps to create that smooth, creamy consistency.
