Raw Choc Hazelnut Cheesecakes

Can you really think of a better pairing than chocolate and hazelnut? these delicious chocolatey treats make for the perfect indulgent dessert treat to stare with family and friends. They’re pretty simple and straight forward to make, don’t require any cooking and are made from a selection of natural and wholesome ingredients! Coconut oil is a key ingredient when making raw desserts, as it really helps to bind ingredients together and also allows the cheesecake fillings to set when chilled. It also has a delicious slightly sweet and fresh flavour, which pairs beautifully with sweet treats and chocolate flavours. For the chocolate aspect of this dish, we’ve used organic raw cacao; which is the un-roasted version of cocoa. It has an amazingly rich flavour and is high in antioxidants too!

Ingredients:

For the base-

1/2 cup hazel nuts

1/2 cup dates

1 cup oats

1 tbsp coconut oil

Filling-

1 1/2 cup dates

1 cup hazel nuts

3 tbsp cacao powder

1/2 cup coconut cream

3/4 cup coconut milk

Pinch sea salt

Dash of vanilla

 

Method:

For the base, add the oats and hazel nuts into a food processor and blend these on their own for a few seconds.

Next, add in the dates and coconut oil and blend until well combined. Pour the mixture into a lined tray and firmly press down to create a smooth base. Place this into the freezer whilst you make the filling.

Combine the dates, hazelnuts, cacao, coconut cream and coconut milk in a food processor or high powered blender and blitz until completely smooth and creamy. This might take a little while. Add in the sea salt and vanilla and blend again to insure a really smooth and velvety texture.

Spread this over the base layer and return the slices to the freezer for around 4 hours to set.

Slice into portions and dig in!
