Simple Garlicky Pasta

Pasta is the perfect weeknight meal that you can rustle up in next to no time at all and be left with something delicious and warming for the whole family to tuck into! It’s also perfect to save as leftovers for lunch the next day.. which makes a nice change from boring sandwiches in my opinion! This pasta really couldn’t be more simple, as the sauce is just a basic, yet delicious combination of garlic and coconut oil.. so kinda’ like a vegan, coconutty version of garlic butter! We’ve also added in some extra greens in there for a little pop of colour and of course, to help get those extra micronutrients in there!

Serves 2- Ingredients:

130g gluten free pasta

1 heaped tbsp Coco Zumi Coconut oil

2 Large cloves garlic

Handful baby spinach

1 cup frozen peas

Sea salt and pepper

Fresh basil and pomegranate seeds to garnish

Method:

Cook the pasta according to the instructions on the packet. When the pasta is almost cooked, add in the peas and cook until vibrant.

Drain both of these, leaving a little of the pasta water in the pan.

In a frying pan, melt the coconut oil over a low to medium heat, then crush in the garlic.

Sauté this until fragrant, then add in the cooked pasta, spinach and peas and stir everything together until evenly coated in the garlicky sauce.

Season to taste with sea salt and pepper, then serve topped with some fresh basil and pomegranate seeds. Enjoy!
