Vanilla & almond salted granola
Now that Summer is hopefully just around the corner, we wanted to bring you some delicious, coconutty recipes to enjoy in the sunshine and that won’t have you spending hours in the kitchen. Granola is an excellent breakfast or on the go snack choice- you could pair it with some coconut yoghurt or almond milk for a super quick breakfast or simply munch on it as a mid-morning or afternoon snack.
This granola really couldn’t be more simple, yet tastes so delicious and is incredibly moreish- you have been warned! We’ve used our organic coconut oil and agave syrup to coat the nuts and oats, which gives them a really yummy hint of cocnutty flavours and also helps to get that nice crisp and crunchy finish.
1 cup jumbo oats
1 tbsp Coco Zumi Coconut oil
2 tbsp agave syrup (could also use maple syrup or rice malt syrup)
A generous pinch of vanilla bean powder
1/4 cup almonds roughly chopped
Pinch of sea salt
Preheat your oven to 180c and line a tray with baking paper.
gently melt the coconut oil and agave together until the coconut oil is liquified.
Combine all of the dry ingredients in a large mixing bowl and then pour over the wet ingredients.
Mix well so that all of the oats are well coated. Transfer this onto your baking tray and cook this in the over for around 14-16 minutes, tossing half way through to insure it doesn’t burn.
Remove from the oven and allow to cool completely. Store in an airtight container.
