Vegan Christmas Pudding Bites

It’s the night before Christmas and today we are bringing you.. some vegan Christmas Pudding bites! These are super quick and easy to make and will be a delicious festive snacking edition to the Christmas period!



For the balls..

1/2 cup cashews

1/2 cup oats

1 1/2 tbsp cacao powder

1/2 cup pitted dates

1/2 cup raisins

Tsp cinnamon

1/2 tsp ginger

Pinch cloves

Tbsp Coco Zumi Coconut oil

For the frosting.. 

1/c cup cashews

1/2 cup coconut milk

2 tbsp agave

Red currants to garnish.


To make the pudding bites, combine the nuts and oats into a food processor and pulse for a few seconds.

Add in the rest of the ingredients and blend until well combined.

Roll the mixture into balls and place these into the freezer for an hour to set.

For the frosting, blend together the cashews, coconut milk and agave until smooth and creamy. Place this into the fridge for a couple of hours to chill and thicken (you could always do this stage before making the puddings)

To each of the pudding bites with a drizzle of the cashew icing and garnish with some red currants. Enjoy and have a wonderful Christmas!
