Vegan Gingerbread French Toast
Christmas morning is once of the most special times of the year for spending quality time with family and loved ones, exchanging gifts and just enjoying a leisurely morning of festivities. Christmas breakfast is always something a little bit extra special.. maybe even with some champers alongside your toast for a cheeky little treat! This vegan French toast recipe is perfect for such an occasion and is just filled with all of those magical Christmas scents and flavours!
Here we’ve used mashed bananas to replace the traditional egg part of the recipe; this also adds a delicious hint of sweetness and banana flavour. We’ve then cooked the toast in our organic coconut oil which just makes it taste even tastier! You need to give this one a try tomorrow morning- you’re family will definitely appreciate it!
1 really ripe banana
Splash almond milk
Pinch ground ginger
Tbsp Coco Zumi Coconut oil
Splash of vanilla extract
Approximately 3 Slices of toast
In a bowl, mash the banana with the back of a fork until smooth. Add in the spices, vanilla and almond milk and mix well.
Heat the coconut oil in a frying pan over medium heat. Soak the bread in the banana mixture, making sure to cover both sides. Once the pan is nice and hot, place in your bread and cook until golden on both sides.
Repeat the process until all of the mixture is gone.
Serve your toast with some fresh fruit and enjoy!
