Coconutty banana oatmeal

Porridge can truly make such an incredibly delicious breakfast and can also be rather a nutritious one at that too! So you might be thinking.. plain oats and water doesn’t sound all that exciting? Well, you’d probably be right there! So, we’ve jazzed up this porridge dish by adding in some coconut oil for some healthy fats and a super creamy texture; as well as the subtle hints of coconutty flavour in there too! Also, to top the whole thing off, there’s an incredible sweet and gooey caramelised banana that’s been fried in coconut oil, leaving it deliciously crisp and golden on the outside, with a soft, indulgent centre. How good does that sound?


Adding coconut oil into your oats is a great way to up the healthy fat content of the dish and also provide some natural sweetness, without having to use any sweeteners. It might also be a nice one to try, if you don’t want to use milk with your oats, as it helps to create that smooth, creamy consistency. 1/2 cup oats

1 cup water

1/2 cup almond milk

2 heaped tsp coconut oil 

Dash of vanilla powder

1 banana

Optional- coconut chips, crushed pistachios


Heat the oats and water in a pan until they start to thicken and most of the liquid has been absorbed. Add in the almond milk and stir well. Leave to cook over a low heat.

Heat 1 tsp off the coconut oil in a frying pan and slice the banana length ways in half. Place the banana into the frying pan and cook until crisp and golden on both sides.

Meanwhile, once your porridge is cooked, stir through the coconut oil and vanilla.

Transfer the porridge into your bowl and top with the banana and coconut & pistachios if you’re using them. Enjoy!
