Lemon & blackberry vegan pancakes
Of course we had to make the final recipe of February a pancake one! I mean, we wouldn’t want you missing out on that now would we! These lemon and blackberry pancakes only require a few simple ingredients and are incredibly quick and easy to make! They’re also completely vegan and don’t require any eggs or dairy products! We’ve added in banan here to help act as a binder and also provide a delicious hint of natural sweetness to the pancakes. They also don’t require any flour and instead, we;ve used oats as the main base for the recipe.
Of course the pancakes have been cooked in none other than our amazing coconut oil! I find coconut oil to be my favourite option when it comes to making pancakes, as it adds a nice coconutty flavour to the pancakes and really works to compliment sweet dishes. For toppings, we’ve kept things pretty simple with some fresh blackberries, lemon zest and a drizzle of agave, but feel free to add whatever you like!
1/2 cup oats
3/4 cup almond milk
A pinch of lemon Zest
1/2 tsp baking powder
Place all of the ingredients into a blender and whiz everything up into a smooth batter.
Heat a tsp of Coco Zumi in a frying pan and once the pan is nice and hot, pour in your pancakes.
When the pancakes start to bubble, flip and cook on the other side. Repeat this for the entire mixture.
Stack onto a plate and top with berries, lemon zest and a squeeze of agave, enjoy!
